Greetings and Salutations!

When you think of October, a certain spooky holiday comes to mind. But October is about more than jack o’ lanterns and candy. It’s also the first full month of fall, with cooler temperatures, longer nights, delicious fruits and vegetables, and beautiful autumnal colors.

Oh, and there’s pumpkin spice. Lots and lots of pumpkin spice.

In short, October is pretty awesome in its own right. Even if you’re not one of those people who eagerly counts down the days until the 31st, you can find something to love about this unique time of year.

To help you celebrate the season, we have put together a basket full of ripe events!

Belly Dance 101

New to Belly Dance? This starter class is where you begin; this class is repeated monthly for 45 minutes each week and is a fun way to learn basic vocabulary, belly dance movements, and increase your strength, balance, & flexibility. It is intended for those with no experience or in conjunction with Belly Dance 201.

Miss the first class? We allow enrollment into the second week of a session!

Want to try Belly Dance with no obligation? Wondering what all the hype is about? This class is perfect for you if you are a complete beginner and have never belly dance before. If you are ashamed of trying out a belly dance class for the first time, or if you are shy, or if you never have the time, this class will help you take your first steps. Learn what Belly Dance really is, its various roots, the benefits of it for the modern woman, and a few Belly Dance moves to show your friends. Tabouli Recipe

Tabbouleh is a Levantine salad made mostly of finely chopped parsley, with tomatoes, mint, onion, bulgur, and seasoned with olive oil, lemon juice, salt and sweet pepper. Some variations add lettuce, or use semolina instead of bulgur. Substitute the bulgur for quinoa for a Gluten free option. Tabbouleh is traditionally served as part of a mezza in the Arab world.

INGREDIENTS  

▢⅓ cup extra virgin olive oil

▢3 tablespoons lemon juice

▢¼ cup extra fine bulgur wheat

▢2 bunches parsley about 2 cups chopped

▢1-2 vine-ripe firm tomatoes

▢2 green onions both green and white part

▢¼ cup fresh mint leaves optional

▢Salt and pepper to taste

INSTRUCTIONS

  • In a small bowl, whisk together olive oil and lemon juice until well combined. Then add the bulgur to the dressing and let it soak until it is soft and plumped, about 15 minutes.

  • Meanwhile, prepare the vegetables by washing, drying thoroughly and finely chopping them. When preparing the tomatoes, it helps to use a colander to drain the excess juice, which you can use in another recipe at a later time.

  • Place the chopped vegetables in a large bowl. Add the optional mint. Season with salt and pepper. Then pour the bulgur and dressing mixture over. Gently toss to combine.

  • Serve at room temperature or cold, with lettuce if desired.
